We are making steady progress on the siding, doing a bit of it at a time. Tim put in the two last attic ventilation windows. We ordered the siding for the other half of the house.
I made tomato sauce on Sunday. I dehydrated the skins. I also dehydrated summer squash and zucchini. Something new, and the more I read about it, I think I will be experimenting with that quite a bit more. The oven makes that easy. I can do large batches. I also want to try drying tomatoes to store in olive oil.
I made pickles this afternoon. Something I haven't done in years. I forgot the satisfaction of hearing jars pinging.
Interesting about making tomato juice..and dehydrating the skins?
ReplyDeleteI put the tomatoes in a hot bath and remove the skins. I read about putting the skins on baking sheets and dehydrating them. Once dried, store them in a jar like any dehydrated vegetable and add them to vegetable soups for flavor. I have never thought to do that before but decided to try it.
DeleteHope you are feeling better soon, it's a busy time with harvesting and preserving.
ReplyDeleteYou have been busy despite your cold. Hope you are feeling better now.
ReplyDeleteHope it doesn't linger in your sinuses. Sounds like you are doing well putting things down for winter. My tomatoes had tough skins this year because it's been so hot they got a bit dehydrated, despite daily watering.
ReplyDeleteI’m always making tomato sauce to freeze in granddaughter sized portions as that’s all she even wants to eat (along with alphabet shaped pasta), I’m going to try dehydrating the skins next time.
ReplyDeleteI applaud your canning efforts! Well done! I made a few jars of salsa, pickled hot peppers, and refrigerator pickles (from farmer's market cucumbers because mine sucked this year). I also sliced a bunch of tomatoes and dried them in the dehydrator, but I made sure they were all but crispy and stored them just like that in mason jars--no olive oil.
ReplyDeleteSummer colds are the worst. I hope you're totally well and feeling better soon.
Not well and still working - that's dedication. I hope you feel much better very soon.
ReplyDeleteWhere do you get all that energy from? You might just relax once the siding is finished. I hope you feel 100% soon. Gigi
ReplyDeleteSorry you're still not well. Why does it seem so much worse to have a cold in summer? But it does.
ReplyDeleteMay I ask what the siding is? I assume it is an external cladding of some kind. What is the material and what does it look like? How fitted?
ReplyDeleteHope you are feeling better. You sure keep busy even when you are sick!
ReplyDeleteThat ping- the Sound of Success. I love it.
ReplyDeleteAt the end of garden season, I picked every veggie left in the garden and cooked them together in a large pot, when all cooked, I canned it in quart jars for winter soup. When I made a roast, I always made sure I had some leftovers and opened a jar of soup mix to add to the beef. It made just enough soup for two people and the beef added that flavor I wanted.
ReplyDeleteAargh - blogger ate my comment! Search Tarhana - a fascinating traditional dried soup powder. I hope that you are well soon.
ReplyDeleteGoodness! For having a sinus cold you certainly have been getting a lot done! You are an amazing woman! :)
ReplyDeleteSo for somebody who hasn't done this, tell us what you make from dehydrated skins.
ReplyDeleteYou crumble them into a powder after they are dehydrated (I have a coffee grinder). You put the powder into a sealed container and add it to vegetable soups. It supposedly adds flavor. We will see.
DeleteUgh -- sorry about the cold! I'm glad you're on the downhill slope!
ReplyDeleteGosh, you do so much despite the cold! I have gone to freezing my pickles instead of canning. I always did enjoy canning, especially the pings!
ReplyDeleteMy mother would dehydrate tomato skins. They add good flavor to soups, but it does take a lot of the powder. I can buy tomato bullion cubes int the Hispanic grocery here (made by Knorr) that have a similar taste.
ReplyDeleteI have a "summer cold" - but my husband had one last weekend and then he tested positive for Covid. So I suspect that is actually what I have. Good Luck with all the canning!
ReplyDeleteI hate when the sinuses are involved. They hurt.
ReplyDeleteHi Debby! I hope you’re feeling much better now! I’ve been busy with all our produce too, since returning from 2 months in Norway..and I love reading about your new garden! It must be so much fun to see it all come to fruitionšBest wishes from Rigmorš¤
ReplyDeleteDebby, you are missed here! Hope all is well with you. Maybe just busy monitoring cats and putting siding on the house?
ReplyDeleteI do hope that you are feeling better soon?
ReplyDeleteMissing your posts. Hope all is well.
