After all this time, I still can

This cold was a bad one, and unfortunately it seems to have settled in my sinuses. Joy of joys. I do seem to be on the downhill side of it. But Saturday was a lost day.

We are making steady progress on the siding, doing a bit of it at a time. Tim put in the two last attic ventilation windows. We ordered the siding for the other half of the house. 

I made tomato sauce on Sunday.  I dehydrated the skins. I also dehydrated summer squash and zucchini. Something new, and the more I read about it, I think I will be experimenting with that quite a bit more. The oven makes that easy. I can do large batches. I also want to try drying tomatoes to store in olive oil.

I made pickles this afternoon. Something I haven't done in years. I forgot the satisfaction of hearing jars pinging.

  1. Interesting about making tomato juice..and dehydrating the skins?

    1. I put the tomatoes in a hot bath and remove the skins. I read about putting the skins on baking sheets and dehydrating them. Once dried, store them in a jar like any dehydrated vegetable and add them to vegetable soups for flavor. I have never thought to do that before but decided to try it.

  4. Hope it doesn't linger in your sinuses. Sounds like you are doing well putting things down for winter. My tomatoes had tough skins this year because it's been so hot they got a bit dehydrated, despite daily watering.

  5. I’m always making tomato sauce to freeze in granddaughter sized portions as that’s all she even wants to eat (along with alphabet shaped pasta), I’m going to try dehydrating the skins next time.

  6. I applaud your canning efforts! Well done! I made a few jars of salsa, pickled hot peppers, and refrigerator pickles (from farmer's market cucumbers because mine sucked this year). I also sliced a bunch of tomatoes and dried them in the dehydrator, but I made sure they were all but crispy and stored them just like that in mason jars--no olive oil.

    Summer colds are the worst. I hope you're totally well and feeling better soon.

  10. May I ask what the siding is? I assume it is an external cladding of some kind. What is the material and what does it look like? How fitted?

  13. At the end of garden season, I picked every veggie left in the garden and cooked them together in a large pot, when all cooked, I canned it in quart jars for winter soup. When I made a roast, I always made sure I had some leftovers and opened a jar of soup mix to add to the beef. It made just enough soup for two people and the beef added that flavor I wanted.
